It\u2019s truly the best time of the year when they\u2019re in season. I\u2019ve already shared a <\/span><a href=\"https:\/\/www.thehealthymaven.com\/savory-galette-goat-cheese-asparagus\/\"><span style=\"font-weight: 400;\">savory galette<\/span><\/a><span style=\"font-weight: 400;\"> but I figured it was time for a sweet version\u2026 and obviously that had to include peaches.\u00a0<\/span><\/p>\n<h2><strong>What is a galette?<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">A galette is one of my favorite desserts to make because they\u2019re so forgiving! They\u2019re a dessert pastry that\u2019s similar to a tart or pie but more free-form. As my baking teacher once told me, \u201cif you mess it up just call it rustic!\u201d. Typically, a galette will be a single layer pastry crust filled with some sort of moist filling and then the sides of the pastry crust are folded up around the filling.\u00a0<\/span><\/p>\n<p>It&#8217;s basically the lazy version of a pie and if you mess up, don&#8217;t sweat it! You can always piece things back together with your hands. Once you bake it you won&#8217;t even notice.<\/p>\n<h2><strong>Peach Galette Ingredients<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">There are two components of this dessert: the crust and the filling.\u00a0<\/span><\/p>\n<p><b>Here\u2019s what you need for the crust:<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Almond flour \u2013 make sure it\u2019s flour and not almond meal!<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Tapioca flour \u2013 a great thickening option that is gluten-free.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Ground flaxseed \u2013 will bind the dough together.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Coconut sugar \u2013 brown sugar works too.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Sea salt \u2013 to taste<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Coconut oil \u2013 the fat component!<\/span><\/li>\n<\/ul>\n<p><b>Here\u2019s what you need for the filling:<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Peaches \u2013 the star of the show. Add in the water and stir. If the crust breaks, just repair it gently with your hands. center of the crust, leaving at least a 2 inch perimeter for folding over.<\/li>\n<li id=\"instruction-step-10\">Slowly fold crust over peaches all around the edges by using the parchment paper and folding it over the peaches. Use a combination of a spatula and your hands, and use your hands to fix any broken spots.
