These egg muffins can be made ahead of time and heated up the day of (or eat them cold, no judgement!) for a satisfying way to start your day.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">These breakfast egg muffins took a few rounds of testing but now that the recipe is perfected, I can\u2019t wait to share!<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-here-s-what-you-need\"><strong>Here\u2019s What You Need<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>Eggs<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;just regular ol\u2019 eggs! I tried this with egg whites and it didn\u2019t turn out so use the full egg!<\/span><\/li>\n\n\n\n<li><b>Goat cheese <\/b><span style=\"font-weight: 400;\">\u2013&nbsp;you can omit the cheese to make it dairy-free or swap for a different cheese you have on hand if needed<\/span> e.g. cheddar cheese, parmesan cheese, monterey jack<\/li>\n\n\n\n<li><b>Yellow onion <\/b><span style=\"font-weight: 400;\">\u2013 adds the perfect savory flavor to these egg muffins.<\/span><\/li>\n\n\n\n<li><b>Mushrooms<\/b><span style=\"font-weight: 400;\"> \u2013 one of the stars! Any type of mushroom works but I prefer baby bellas for this recipe.<\/span><\/li>\n\n\n\n<li><b>Milk [any kind]<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;any type of milk works but I use unsweetened almond milk because that\u2019s what I usually have on hand.<\/span><\/li>\n\n\n\n<li><b>Dried thyme <\/b><span style=\"font-weight: 400;\">\u2013 you\u2019ll mix in just a hint of seasoning to the vegetable mixture before adding in the eggs. Feel free to sub with fresh thyme if you have it!<\/span><\/li>\n\n\n\n<li><b>Salt and pepper <\/b><span style=\"font-weight: 400;\">\u2013 to taste!<\/span><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-flavor-variations\"><strong>Flavor Variations<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">I love the flavor of these egg muffins but this recipe is completely customizable! Here are some ideas for different egg muffin recipes:<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>Spinach and red pepper <\/b><span style=\"font-weight: 400;\">\u2013&nbsp;Saut\u00e9 chopped red pepper and add in your spinach a few minutes before you\u2019re done cooking to wilt the greens.&nbsp;&nbsp;<\/span><\/li>\n\n\n\n<li><b>Ham and cheese <\/b><span style=\"font-weight: 400;\">\u2013&nbsp;Any meat works really! Add chopped ham, bacon, breakfast sausage, etc. and cheese to the muffin tin for an extra boost of protein.&nbsp;<\/span><\/li>\n\n\n\n<li><b>Broccoli and cheese<\/b><span style=\"font-weight: 400;\"> \u2013 Get your greens in first thing in the morning! I recommend saut\u00e9ing or steaming your broccoli before adding the cheese and egg mixture.&nbsp;<\/span><\/li>\n\n\n\n<li><b>Kale and mushroom <\/b><span style=\"font-weight: 400;\">\u2013&nbsp;Add a little onion or garlic to this veggie combination and you have a vegetarian flavor explosion! Saut\u00e9 chopped bell peppers with the chopped tomato and then add in the spinach right before you\u2019re done cooking so it can wilt a bit.&nbsp;<\/span><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-egg-muffins\"><strong>How to Make Egg Muffins<\/strong><\/h2>\n\n\n\n<p><b>STEP 1:<\/b><span style=\"font-weight: 400;\"> Heat olive oil in a large skillet over medium heat. Add onions and saut\u00e9 until translucent. If you want something to pair it with or are making this for a crowd, here are some ideas:<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>Sliced avocado<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;I love adding sliced avocado to pretty much any egg breakfast.&nbsp;<\/span><\/li>\n\n\n\n<li><b>Fruit salad<\/b><span style=\"font-weight: 400;\"> \u2013 breakfast can always be elevated with a side of fruit!<\/span><\/li>\n\n\n\n<li><b>Breakfast meat <\/b><span style=\"font-weight: 400;\">\u2013 pair with bacon, breakfast sausage or tempeh sausage for added protein.&nbsp;<\/span><\/li>\n\n\n\n<li><b>Side salad<\/b><span style=\"font-weight: 400;\"> \u2013 call me weird but I love having a side salad with egg dishes for breakfast. Get your greens in early in the day!<\/span><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-tips-to-prevent-sticking\"><strong>Tips to Prevent Sticking<\/strong><\/h2>\n\n\n\n<p><strong>Non-stick spray or butter<\/strong>&#8211; always (and I mean ALWAYS) grease your egg muffin tin with either non-stick cooking spray (I like spray olive oil) or use butter and brush super well. You&#8217;ll want to get the bottom, sides and alone the top.<\/p>\n\n\n\n<p><strong>Parchment paper<\/strong> &#8211; I do find that in spite of my best efforts egg muffins will still stick a little. For extra measure I like to cut circles of parchment paper to place onto the bottom of each muffin cup. I find this method words best as filling the whole cup with parchment paper can lead to a misshapen egg cup.<\/p>\n\n\n\n<p><strong>Silicone muffin liners<\/strong>&#8211; I would <em>not<\/em> recommend regular paper liners as they tend to stick to the egg but you can use <a href=\"https:\/\/amzn.to\/3y8u4OZ\" target=\"_blank\" rel=\"nofollow noopener\">silicone muffin liners<\/a> that will peel off easily and are reusable.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-store-leftovers\"><strong>How to Store Leftovers<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\"><strong>In Fridge &#8211; <\/strong>These egg muffins store super well! After allowing to cool on a wire rack, place in an airtight container in the refrigerator for up to 1 week. Just heat in the microwave for roughly 30 seconds.<\/span> Perfect for meal prep!<\/p>\n\n\n\n<p><strong>To Freeze- <\/strong>Let the muffins cool completely, then individually wrap them in plastic wrap or tinfoil. Place them in a ziplock bag and freeze for up to 3 months.
