You could also use chicken thighs or pre-shredded chicken.<\/li>\n\n\n\n<li><strong>Water<\/strong> &ndash; for boiling chicken.<\/li>\n\n\n\n<li><strong>Olive oil<\/strong> &ndash; for cooking your veggies + chicken<\/li>\n\n\n\n<li><strong>Yellow onion<\/strong> &ndash; Use half for chicken and half for veggies.<\/li>\n\n\n\n<li><strong>Garlic cloves<\/strong> &ndash; Ideally freshly minced garlic cloves.<\/li>\n\n\n\n<li><strong>Taco seasoning<\/strong> &ndash; or make your own using a combo of chili powder, ground cumin, paprika, garlic powder, onion powder, oregano + salt and pepper.<\/li>\n\n\n\n<li><strong>Chicken broth\/stock<\/strong> &ndash; for cooking your pulled chicken.<\/li>\n\n\n\n<li><strong>Salsa <\/strong>&ndash; You can use <a href=\"https:\/\/www.thehealthymaven.com\/restaurant-style-salsa-recipe\/\">homemade salsa<\/a> or jarred salsa. You can omit if you don&rsquo;t like cilantro though.<\/li>\n\n\n\n<li><strong>Lime zest + juice<\/strong> &ndash; A fresh lime makes all the difference!<\/li>\n\n\n\n<li><strong>Salt + Pepper<\/strong> &ndash;  feel free to adjust to flavor and sodium preferences.<\/li>\n<\/ul>\n\n\n\n<p><strong>Refried Beans<\/strong> &ndash; I generally just buy canned refried beans. You could also use black beans or pinto beans.<\/p>\n\n\n\n<p><strong>Guacamole<\/strong> &ndash; This is my <a href=\"https:\/\/www.thehealthymaven.com\/traditional-guacamole-recipe\/\">go-to recipe<\/a>.<\/p>\n\n\n\n<p><strong>Pico de Gallo<\/strong> &ndash; I like to make <a href=\"https:\/\/www.thehealthymaven.com\/the-best-ever-pico-de-gallo\/\">homemade pico de gallo<\/a> but you can also just use salsa.<\/p>\n\n\n\n<p><strong>Sour Cream<\/strong> &ndash; you can omit if you don&rsquo;t like sour cream or use Greek yogurt instead.<\/p>\n\n\n\n<p><strong>Shredded Cheese<\/strong> -I like shredded cheddar cheese or Monterrey Jack Cheese.<\/p>\n\n\n\n<p><strong>Flour Tortillas<\/strong> &ndash; be sure to buy large burrito-sized flour tortillas<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-chicken-burritos\">How to Make Chicken Burritos<\/h2>\n\n\n\n<p class=\"has-quaternary-background-color has-background\"><strong>STEP 1: COOK CHICKEN<\/strong><\/p>\n\n\n\n<p>Add salted water to a large pot and once it&rsquo;s boiling mix in chicken breasts. Boil chicken for 15 minutes or until cooked all the way through. Remove from water and allow to cool before shredding with two forks. Add olive oil to a large skillet over medium heat and cook onion and garlic for 3-5 minutes. Stir in chicken, taco seasoning, chicken broth, salsa and salt and pepper. Lower heat to medium-low and cook for 5-10 minutes or until chicken has absorbed most of liquid. Cook for 5-10 minutes or until lightly browned. Alternatively you can use store-bought. Heat up your refried beans. Heat up tortillas in microwave for 30-60 seconds wrapped in a dishtowel to ensure they a pliable. To the center of each burrito add shredded chicken, cooked veggies, rice, guacamole, pico de gallo, refried beans, shredded cheese and a dollop of sour cream. Fold in the sides of the burrito (1-2 inches inwards). Now fold in the bottom of the burrito and slowly roll your burrito upwards, tucking in the filling and sides as you go. Don&rsquo;t worry if stuff is coming out the sides. This step is optional but I like the crunch it adds. Feel free to sub in shredded rotisserie chicken instead of making your own boiling your chicken. You can use regular cooked chicken breast or chicken thighs. This chicken burrito recipe is perfect for prepping in advance. I&rsquo;d recommend leaving out some of the &ldquo;wet&rdquo; ingredients like guac, pico and sour cream if you are planning to make them in advance. This is especially true if you are planning to freeze your chicken burritos. Ideally if you&rsquo;re storing long-term I&rsquo;d leave out the &ldquo;wet&rdquo; ingredients like guac, salsa\/pico and sour cream. You can always add them on top!
