If you lived in Montreal in the early 2000s then you probably survived off the late night eats of &ldquo;two dollar chow&rdquo; or &ldquo;two chow&rdquo; aka two dollar chow mein. All you needed was a toonie and you had a delicious noodle dish to soak up the alcohol that was likely coursing through your body.<\/p>\n\n\n\n<p>Now to be fair *delicious* is probably a stretch. Anything tastes delicious after that many drinks but for two dollars it seemed like a culinary delight!<\/p>\n\n\n\n<p>In hindsight I&rsquo;m pretty sure the recipe was packaged ramen noodles with peanut butter, soy sauce and sriracha but it scratched an itch we all needed at 2:00 AM.<\/p>\n\n\n\n<p>These days I&rsquo;m asleep at 9:00 PM and only occasionally enjoy a singular glass of red wine but my love for peanut noodles remains. That being said, my version is much, much, much better. It requires a few more ingredients but it&rsquo;s still delicious and comes together in 15 minutes. The perfect meal for those busy weeknights&hellip;or late night escapades I suppose!<\/p>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-group has-quaternary-background-color has-background is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"h-why-make-this-recipe\">Why Make This Recipe?<\/h2>\n\n\n\n<p><strong>Faster than takeout<\/strong> &ndash; that&rsquo;s right&hellip;this meal is ready in just 15 minutes!<\/p>\n\n\n\n<p><strong>Gluten-free + vegan<\/strong> &ndash; instead of ramen noodles I&rsquo;m using rice noodles and in place of soy sauce I use tamari which makes this recipe 100% gluten-free. This recipe is also vegan.<\/p>\n\n\n\n<p><strong>Meal prep-friendly<\/strong> &ndash; prep this meal in advance so you can eat your spicy peanut noodles all week!<\/p>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-in-peanut-noodles\">Ingredients in Peanut Noodles<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Rice Noodles <\/strong>&ndash; I like the <a href=\"https:\/\/amzn.to\/49tu13B\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Lotus Foods Pad Thai Noodles<\/a> but you can use any kind of rice noodles you prefer.<\/li>\n\n\n\n<li><strong>Sesame Oil <\/strong>&ndash; for cooking your veggies.<\/li>\n\n\n\n<li><strong>Scallions <\/strong>&ndash; Cook with the white and light green parts only and reserve the dark green for garnishing after cooking.<\/li>\n\n\n\n<li><strong>Garlic<\/strong> &ndash; ideally use freshly minced garlic rather than the refrigerated kind.<\/li>\n\n\n\n<li><strong>Ginger <\/strong>&ndash; I grate my ginger using a microplane. No need to peel!<\/li>\n\n\n\n<li><strong>Bell pepper <\/strong>&ndash; any color works here.<\/li>\n\n\n\n<li><strong>Edamame <\/strong>&ndash; Use the pre-shelled kind if you can find it. Totally fine to use frozen here!<\/li>\n\n\n\n<li><strong>Natural Peanut Butter<\/strong> &ndash; We want to be using natural peanut butter than contains just peanuts with or without salt. Peanut butter spreads like jiffy don&rsquo;t make a very smooth sauce but will work in a pinch.<\/li>\n\n\n\n<li><strong>Tamari<\/strong> &ndash; or soy sauce if you aren&rsquo;t gluten-free.<\/li>\n\n\n\n<li><strong>Water<\/strong> &ndash; to thin out the sauce.<\/li>\n\n\n\n<li><strong>Lime juice<\/strong> &ndash; ideally use freshly squeezed lime.<\/li>\n\n\n\n<li><strong>Sweet Chili Sauce<\/strong> &ndash; you can find this in the Asian aisle at most grocery stores.<\/li>\n\n\n\n<li><strong>Sriracha<\/strong> &ndash; you can skip this if you don&rsquo;t want them to be too spicy but can add more if you like really spicy peanut noodles.<\/li>\n\n\n\n<li><strong>Maple Syrup<\/strong> &ndash; to balance the sauce with a little sweetness. Add your scallions, garlic and ginger and cook for 2 minutes.
