There was probably a period of time where almost all of my recipes were inspired by my love of oatmeal. Lucky for you (and me) I\u2019ve diversified my healthy eating habits and this blog has grown into much more than an oatmeal blog\u2026<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">But today I&#8217;m going back to my roots ! I\u2019ve got a delicious banana baked oatmeal recipe that can be prepped in advance and tastes just like banana bread! It\u2019s comforting yet light. It\u2019s the perfect healthy breakfast when you want to eat something filling but also don\u2019t want a cold smoothie<\/span> in the middle of winter!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-needed\"><strong>Ingredients Needed<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>Rolled oats<\/b><span style=\"font-weight: 400;\"> \u2013 grab gluten-free oats if needed<\/span>. Quick oats also work well. I would not recommend using steel-cut oats.<\/li>\n\n\n\n<li><b>Oat flour <\/b><span style=\"font-weight: 400;\">\u2013 you can buy it or make your own by blending rolled oats in a food processor or blender until a fine powder consistency is reached.<\/span><\/li>\n\n\n\n<li><b>Flax Eggs<\/b><span style=\"font-weight: 400;\"> \u2013 mix 2 tablespoons ground flaxseed with 6 tablespoons of warm water.<\/span> This makes this banana baked oatmeal fully vegan!<\/li>\n\n\n\n<li><b>Bananas<\/b> &#8211; Ideally use extra ripe bananas that have some nice brown speckles. Reserve a 1\/3 of a banana for banana slices on top.<\/li>\n\n\n\n<li><b>Non-dairy milk<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;I used unsweetened almond milk but any dairy-free milk will do.<\/span> Oat milk, coconut milk or even rice milk all work great!<\/li>\n\n\n\n<li><b>Maple syrup<\/b> &#8211; Feel free to add more or less based on flavor preferences. You could also substitute with honey.<\/li>\n\n\n\n<li><b>Chopped walnuts<\/b> &#8211; You could use any crushed nuts. Pecans, hazelnuts, <\/li>\n\n\n\n<li><b>Coconut oil<\/b> &#8211; for greasing your baking pan.<\/li>\n\n\n\n<li><b>Ground cinnamon<\/b> &#8211; for that classic banana bread flavor.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-banana-baked-oatmeal\"><strong>How to Make Banana Baked Oatmeal<\/strong><\/h2>\n\n\n\n<p class=\"has-quaternary-background-color has-background\"><b>STEP 1:<\/b><span style=\"font-weight: 400;\"> <\/span><strong>MAKE FLAX EGGS<\/strong><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Make your flax eggs by mixing the ground flax seed with warm water. It also adds a bit of protein! Any nut butter would work great here.<\/li>\n\n\n\n<li><strong>Chocolate chips<\/strong> &#8211; you could stir chocolate chips directly into the batter or simply sprinkle on top!<\/li>\n\n\n\n<li><strong>Fresh fruit <\/strong>&#8211; Any type of fresh berries or desired fruit tastes delicious with baked oatmeal.<\/li>\n\n\n\n<li><strong>Coconut cream<\/strong> &#8211; hear me out! A scoop of coconut cream (the fatty top of a can of coconut milk) is so so delicious paired with this banana baked oatmeal!<\/li>\n<\/ul>\n\n\n<div class=\"block-tip cwp-inner\">\n\n<h2 class=\"wp-block-heading block-tip__title\" id=\"h-bake-them-as-muffins\"><strong>Bake Them As Muffins!<\/strong><\/h2>\n\n\n\n<p>You can easily bake this banana baked oatmeal in a muffin tin, if desired. Divide equally into 12 muffin cups and bake for 20 minutes. I recommend mixing the entire recipe and baking. <\/span><\/p>\n\n\n\n<p><strong>Fridge<\/strong>: <span style=\"font-weight: 400;\">Store, covered in the refrigerator for up to 5 days. To reheat, you can pop it in the microwave if you\u2019re running short on time, but I recommend reheating in a conventional oven or toaster oven.&nbsp;<\/span><\/p>\n\n\n\n<p><strong>Freezer<\/strong>: You can also store your banana baked oatmeal in the freezer. Wrap a freezer-safe dish or container with plastic wrap and then tin foil. Remove both before allowing to thaw on counter for several hours.
